Options being reviewed are contracted service, one cooking kitchen, restaurant model (use of local restaurants) or remaining the same. There was discussion on whether the current kitchens can be upgraded or expanded. At the current locations, there is no additional space for expansion and the equipment is upgraded or replaced when needed. A question was asked if the cost would go down if the program was moved to a catered program. That has not been determined at this time and research is still being done to determine the meal cost. When discussing the restaurant model, it was mentioned that there would be set times and participants would have the ability to choose. Currently, Pierce County has instituted this at some of their locations and has noticed an increase in participation. With the restaurant there would be no activities like there are now.
