4. Senior Nutrition Program Menu Suggestions and Recommendations for 2 Quarter
nd
Hanson reviewed the menus for the 2 quarter with the Council members. She opened the floor for
any suggestions or comments pertaining to the menus. There was discussion on the frequency of
soup and sandwich days and the high number of tomato based soups served. There was also
discussion regarding fruit canned, fresh or frozen. It was stated that fresh is typically more
expensive especially when the product is not in season. Kvam, explained that one of nutritional
requirements is providing a source of Vitamin A every other day on the menu. There was discussion
on the pork that is used at the Deer Park kitchen and it was explained they are trying to find a good
and cost effective product from the vendor. Council members mentioned concerns of certain menu
combinations on certain dates. Those concerns will be kept in mind when playing the quarters
menus.
RESULT: DISCUSSED
5. Research and Evaluate Options for the Elderly Nutrition Program
Hanson explained to the NAC, that research has begun regarding the long term planning of the
Elderly Nutrition Program. Options being reviewed are contracted service, one cooking kitchen,
restaurant model (use of local restaurants) or remaining the same. There was discussion on whether
the current kitchens can be upgraded or expanded. At the current locations, there is no additional
space for expansion and the equipment is upgraded or replaced when needed. A question was
asked if the cost would go down if the program was moved to a catered program. That has not been
determined at this time and research is still being done to determine the meal cost. When
discussing the restaurant model, it was mentioned that there would be set times and participants
would have the ability to choose. Currently, Pierce County has instituted this at some of their
locations and has noticed an increase in participation. With the restaurant there would be no
activities like there are now. It was mentioned that the individually prepared is nice, but the current
Senior Center model is great.
NAC members were informed that everything is just in the beginning stages of research. There are
many parts that still need to be completed before a decision can be made. The possibility of
piloting an alternative at a Senior Nutrition Site with lower numbers was discussed. NAC members
were asked to take information back to the Senior Nutrition Site they represent and bring back
suggestions to the June meeting.
RESULT: DISCCUSSED

since the former one had discontinued the program. She was able to find Sheryl Tuenge of
New Richmond to take the position.
She stated that during her home visits, overall the comments good.
Currently, there are 132 participants receiving Home-Delivered Meals. There has been an
increase in the New Richmond, River Falls and Woodville. The number of Home-Delivered Meal
volunteers in Hudson is at a good level, while New Richmond is in need of more.
In February, the Home-Delivered Meal participants received Love Bags. The Love Bags were
filled with fruit and were provided through a donation from the United Way.
Zeuli reported that the collaboration with Five Loaves in New Richmond has increased to
delivering of items to twice a week to the Home-Delivered Meal participants who have signed up.
