NUTRITION ADVISORY COUNCIL
June 14, 2017 10:30 AM

CALL TO ORDER
The Nutrition Advisory Council President Brunner called the meeting to order at 10:30 a.m.

APPROVAL OF MINUTES
1. Nutrition Advisory Council Regular Meeting April 10, 2017 at 10:30 AM

The Council members reviewed the minutes from the April 10, 2017
noted. A motion to approve the minutes
was made by Council Member Croes; seconded by
Council member Deja; motion carried.
RESULT: APPROVED

BUSINESS ITEMS

1. Home-Delivered and Congregate Meal 1 Quarter Statistics

NAC members reviewed the 1 Quarter Statistics. Preventative Nutrition Program
Coordinator Hanson pointed out that there a decrease for both Congregate and Home-
Delivered Meals.
RESULT: DISCUSSED
2. Home-Delivered Meal Program Statistics and Trends by Brandy Zeuli, Outreach Coordinator
Outreach Coordinator Zeuli informed the NAC that there are currently 128 participants on the
Home-Delivered Meal Program (HDM). She stated that there has been an increase in Somerset
and River Falls while Deer Park has seen a decrease. Hudson goes up and down every month.
Zeuli discussed a couple of comments regarding the HDM program with NAC members.

3. Senior Nutrition Program Menu Suggestions and Recommendations for 3 Quarter
NAC members received menus for July through September. Hanson reminded the NAC members
that the menus are on an annual rotation. It was asked if there are alternates for items that HDM
what is on the menu. It was explained that it is hard to provide substitutes
for items that are not liked, however there is the ability to substitute desserts for those that are
diabetic. Zeuli explained that participants are able to cancel the meal.
NAC Chair Brunner started a suggestion box at the New Richmond Nutrition Site. She read the
suggestions to the NAC more chef salads, more cold salads, the spinach salads are great, but
smaller pieces would be nice, more cookies and chocolate pie. Peterson-Michschl mentioned a
concern regarding canned spinach and tasted off. Public Health Nutritionist Babich reiterated
why certain foods are on the menu. The desserts are typically general to allow the cooking
kitchens choice and determine what fits in the prep schedule for the day. It was mentioned, that
there are too many tomato based soups when there is a cooks choice soup day.
Hanson informed the NAC there is a Cooks meeting schedule where they will discuss a variety
of topics. They will also be recipe sharing which will hopefully make preparation of meals more
consistent between the cooking kitchens.

4. Research and Evaluate Options for the Elderly Nutrition Program
Hanson opened the floor for discussion on the following topics when looking at the future of the
Elderly Nutrition Program: Keep as is, Contract the meals, Restaurant Style, Go to one cooking
kitchen. (See attachment for table).
RESULT: DISCUSSED
5. Automated External Defibrillator (AED) at Senior Centers
Beckman informed the NAC members that all the Senior Center have had Automated External
Defibrillators (AED) installed. The Senior Center Boards were instrumental in working with the
Village/Cities/Townships or entities where the Senior Centers are located. Staff have been trained
and the will be monitored.

There were none noted.
ANNOUNCEMENTS & CORRESPONDENCE
Beckman informed the NAC members that the St. Croix County Volunteer Application has been revised;
however, the full packet is stilling being reviewed.
Beckman provided the NAC members with details on the current openings for sub cooks and cooks aids.
NAC members were provided with Heart Health Flyer and information about the upcoming Nutrition
Talks. They were also given applications for the Outstanding Older Adult Award.

Council Chair Brunner adjourned the meeting at 11:58 a.m.
