CALL TO ORDER
The Nutrition Advisory Council President Brunner called the meeting to order at 10:30 a.m.

APPROVAL OF MINUTES
1. Nutrition Advisory Council Regular Meeting June 14, 2017 at 10:30 AM

BUSINESS ITEMS

1. Home-Delivered and Congregate Meal 2 Quarter Statistics and 6 month Statistics

NAC members reviewed the 2 Quarter and 6 month Statistics. Beckman pointed out that the 6
month report shows an increase in Congregate Dining while Home-Delivered has decreased.
RESULT:DISCUSSED
2. Home-Delivered Meal Program Statistics and Trends by Brandy Zeuli, Outreach Coordinator
Outreach Coordinator Zeuli informed the NAC that there are currently 122 participants on the
Home-Delivered Meal Program (HDM). She stated that there has been an increase in Hudson,
New Richmond, and River Falls while Glenwood City, Baldwin, and Woodville are a bit quieter.
A mailing was sent out to all the local business to recruit for volunteers in the New Richmond
area.
New coolers were ordered for the delivery of the home-delivered meals. They will arrive
sometime in October and will replace the current bags being used. The new coolers were ordered
thanks to a donation and the FEMA grant.
Zeuli discussed a couple of comments regarding the HDM program with NAC members.

3. Senior Nutrition Program Menu Suggestions and Recommendations for 4 Quarter
NAC members received menus for October to December.
Some suggestions that were given by participants on past menu items were: the breading on the
fish was nice; add sauce to the noodles with serving chicken parmesan over noodles; when serving
pies just send one type of pie instead of a variety and to cook them until done not burnt; the peelings
on the potatoes are hard to digest; use
stop ruining the roasted roots (no clarification was provided); more hot dishes; do not mix hot and
cold sides; more fresh fruit and more beef; no asparagus.. There was a question about the delivery
of spinach in full hotel pans instead of smaller pans for the number of meals served that day to keep
the spinach from drying out. There was question about the interaction between spinach and
Coumadin and substitutes for spinach. There are some substitutes for spinach, but to provide
variety, it needs to be on the menu from time to time. It was mentioned that there are still too many
carbs on certain days.

4. Review of the 2016 Meal Cost Tool Analysis
NAC members received a copy of the 2016 Meal Cost Tool Analysis. Beckman informed the NAC
members that the Meal Cost Tool is a state mandated analysis tool that allows each county to
determine the cost of Nutrition Program. Overall, the 2016 average cost for both Home-delivered
meals and Congregate is $11.55. There was discussion regarding certain lines items and how the
average cost is determined.
RESULT: DISCUSSED
5. Discuss 2018 Donation Request for the Home-Delivered Meal and Congregate Programs
Beckman opened the floor for discussion regarding the current suggested donation and the
possibility of increasing the suggested donation. There has not been an increase in many years. It
was requested that there be information shared in the ADRC News and announced at the Nutrition
Senior Dining Sites. There was discussing regarding increasing the suggested donation to go $5.00
a meal. A motion to increase the suggested donation to $5.00 a meal was made by NAC member
McConaughey; seconded by NAC member Peterson Michschl; motion carried.
RESULT: ACCEPTED
6. Review the 2017 Congregate Nutrition Program Participant Survey
NAC members received copies of the 2017 Congregate Nutrition Program Survey that was
administered in the spring of 2017. NAC reviewed the results and discussed certain questions.
RESULT: DISCUSSED
7. Research and Evaluate Options for the Elderly Nutrition Program
Hanson reviewed the handout that was created during the brainstorming session held during the
June 14, 2017 meeting. She asked what the NAC would like to do next. It was suggested that
some NAC members attend a restaurant model in Pierce County to research how it is run. The
December meeting will be held in Hudson, so NAC members will be able to experience a
contracted service.

ANNOUNCEMENTS & CORRESPONDENCE
Beckman informed the NAC members that the St. Croix County Health Inspector will begin visiting each
of the Senior Nutrition Sites.
Beckman informed the NAC members about the Caregiver Conference on Friday, September 28 at WITC
New Richmond.
The St. Croix County Employee kick off for United Way will begin in October.

Council Chair Brunner adjourned the meeting at 12 p.m.
